This salad is so easy to make! I try to make this for lunch at least 3 times a week. The avocado and chopped spinach gives you tons of protein to fill you up and carry you through your day.
Ingredients:
1 Avocado
1 Large Heirloom Tomato
1 Cucumber
1 Orange or Yellow Bell Peper
1 cup Freshly Chopped Spinach
1/4 cup Freshly Chopped Cilantro
1 Slice Fresh Feta Cheese (or one scoop of crumbled feta)
Directions:
Chop all ingredients and place in a large bowl. Drizzle with desired amount of extra virgin olive oil and red wine vinaigrette. Season to taste with salt and pepper.
